We source bones from animals raised within 200km of our Toronto kitchen: grass-fed Ontario beef, pasture-raised Ontario chicken. They go into the pot with water, apple cider vinegar, and a few herbs.
They stay there for 20 to 24 hours at low heat. That's the only way to get the wobble, the real gelatin, when the broth cools. Anything faster cuts corners we won't cut.
